Serves: 50

Ingredients:

– 2 1/2 cups white sugar
– 6 cups water
– 2 (3 ounce) packages strawberry flavored gelatin mix
– 1 (46 fluid ounce) can pineapple juice
– 2/3 cup lemon juice
– 1 quart orange juice
– 2 (2 liter) bottles lemon-lime flavored carbonated beverage

Directions:

1. Bring the sugar, water, and strawberry flavored gelatin to a boil in a large saucepan; boil for 3 minutes. Stir in the pineapple juice, lemon juice, and orange juice. Divide mixture into 2 separate containers and freeze for 8 hours.

2. Combine the contents of 1 container with 1 bottle of the lemon-lime flavored carbonated beverage in a punch bowl; stir until slushy. Repeat with remaining portions as needed.

Chicken and Bacon Shish Kabobs

Chicken and Bacon Shish Kabobs

Tangy marinated chicken and mushrooms, wrapped in bacon and skewered. Excellent for entertaining and trying something new!

Ingredients

– 1/4 cup soy sauce
– 1/4 cup cider vinegar or white wine vinegar
– 2 tablespoons honey
– 2 tablespoons canola oil
– 10 large mushrooms, cut in half
– 2 green onions, minced
– 3 skinless, boneless chicken breast halves – cut into chunks
– 250 pound sliced thick cut bacon, cut in half
– 1 (8 ounce) can pineapple chunks, drained
– skewers

Directions

1. In a large bowl, mix the soy sauce, cider vinegar, honey, canola oil, and green onions. Place the mus

hrooms and chicken into the mixture, and stir to coat. Cover, and marinate in the refrigerator at least 1 hour.

2. Preheat grill for high heat.

3. Remove the mushrooms and chicken from the marinade and shake off excess. Pour the marinade into a small saucepan and bring to a boil over high heat. Reduce heat to medium-low and simmer for 10 minutes; set aside.

4. Wrap the chicken chunks with bacon, and thread onto skewers so that the bacon is secured. Alternate with mushroom halves and pineapple chunks.

5. Lightly oil the grill grate. Arrange skewers on the prepared grill. Cook 15 to 20 minutes, brushing occasionally with remaining soy sauce mixture, until bacon is crisp and chicken juices run clear.

Ingredients

– 2 plum tomatoes, chopped
– 1 ripe avocado – peeled, pitted and chopped
– 1/4 cup finely chopped red onion
– 1 clove garlic, minced
– 1 tablespoon snipped fresh parsle

– 1 tablespoon chopped fresh oregano
– 1 tablespoon olive oil
– 1 tablespoon red or white wine vinegar
– 4 ounces crumbled feta cheese

Directions

In a bowl, gently stir together tomatoes, avocados, onion, and garlic. Mix in parsley and oregano. Gently stir in olive oil and vinegar. Then stir in feta. Cover, and chill for 2 to 6 hours.

Chocolate Chip Cookies

These classic chocolate chip cookies are sure to be an instant hit with family and friends.

Ingredients

3/4 cup butter, softened
3/4 cup granulated sugar
3/4 cup firmly packed dark brown sugar
2 large eggs
1 1/2 teaspoons vanilla extract
2 1/4 cups plus 2 tablespoons all-purpose flour
1 teaspoon baking soda
3/4 teaspoon salt
1 ½ cups chocolate chips/morsels*

Directions

1. Beat butter and sugars at medium speed with an electric mixer until creamy. Add eggs and vanilla, beating until blended.

2. Combine flour, soda, and salt in a small bowl; gradually add to butter mixture, beating well. Stir in morsels. Drop by tablespoonfuls onto lightly greased baking sheets.

3. Bake at 350° for 8 to 14 minutes or until desired degree of doneness. Remove to wire racks to cool completely.

Peanut Butter-C

hocolate Chip Cookies: Decrease salt to 1/2 teaspoon. Add 1 cup creamy peanut butter with butter and sugars. Increase flour to 2 1/2 cups plus 2 tablespoons. Proceed as directed. (Dough will look a little moist.)

Oatmeal-Raisin Chocolate Chip Cookies: Reduce flour to 2 cups. Add 1 cup uncooked quick-cooking oats to dry ingredients and 1 cup raisins with morsels. Proceed as directed.

Chunky Cherry-Double Chip Cookies: Microwave 1 tablespoon water and 1/2 cup dried cherries in a glass bowl at HIGH 30 seconds, stirring once. Let stand 10 minutes. Add 1 cup white chocolate morsels, 1/3 cup slivered toasted almonds and cherries with chocolate chips. Proceed as directed.

*If you can’t score chocolate chips/morsels, use dark chocolate instead. Break or chop the chocolate into small chunks; to break it up further, put the chocolate into a plastic bag and bash it with a rolling pin.

3/8 cup butter
1/4 cup confectioners’ sugar
1 cup all-purpose flour
3 eggs
1 cup white sugar
1 tablespoon grated lemon zest
1/4 cup lemon juice
3 tablespoons all-purpose flour
2 tablespoons confectioners’ sugar for dusting

Directions:

1. Preheat oven to 350 degrees F (175 degrees C).

2. Process butter, 1/4 cup confectioners’ sugar and 1 cup flour in food processor 10 seconds. Pat dough evenly into 9 inch round pie plate.

3. Bake 12 to 15 minutes, until golden.

4. Combine eggs, white sugar, lemon zest, lemon juice and 3 tablespoons flour and mix until smooth; pour mixture over hot crust.

5. Bake 15 to 20 minutes more, until firm. Let cool completely in baking dish. Sprinkle with confectioners’ sugar and cut into 12 triangles.

Ingredients:

Homemade Spaghetti Sauce

– 1 tablespoon olive oil
– 3/4 small onion, chopped
– 3 green onions, chopped
– 1 tablespoon crushed garlic
– 1-1/2 (28 ounce) cans peeled and diced tomatoes
– 2 tablespoons dried basil
– 2 tablespoons dried oregano
– 1-1/2 teaspoons white sugar

Spaghetti Pie

-8 oz .spaghetti
-400 g shredded Cheddar cheese
-60 g grated Parmesan cheese
-1 teaspoon oregano
-1/2 teaspoon salt
-1/4 teaspoon black pepper
-4 eggs, beaten
-1/4 cup butter, melted
-2 cups spaghetti sauce
-1/2 cup shredded mozzarella cheese

Directions:

Spaghetti Sauce

1. In a large saucepan heat oil over medium heat. Saute onion, green onion and garlic. When onions are clear, stir in tomatoes, basil, oregano and sugar. Bring to a boil, reduce heat to low, and simmer for 20 minutes.

Spaghetti Pie

1. Preheat oven to 350 degrees F (175 degrees C).
2. Cook spaghetti until almost tender and drain
3. Combine spaghetti with both types of cheese, oregano, salt, pepper, eggs and butter; mix well.
4. Butter pan. Pour mixture into pan.
5. Bake at 350 degrees F (175 degrees C) for 20-25 minutes. Sprinkle mozzarella cheese over the top of the pie then bake for 5 minutes longer, until cheese melts.
